A smoke generator is a device used to produce smoke for smoking food. This smoke is generated in a separate unit outside the main smoking chamber, which allows the burning process to be separated from the actual space containing the smoked products. It typically operates on the principle of slow combustion or smoldering of wood chips, sawdust, or pellets using a heating coil. The generated smoke is then routed through a pipe into the smokehouse. The main advantage of this solution is the precise temperature control in the smoking chamber, which remains low. This makes the generator particularly suitable for so-called "cold smoking," where food is smoked but not thermally cooked.
