Xylan

Xylan refers to a type of non-stick surface that is applied to the inside of pans. Its main purpose is to create a smooth and slippery layer that prevents food from sticking and burning during cooking. This property makes it possible to cook with less fat or oil and makes subsequent cleaning of the pan much easier. The basis of this surface is a material based on fluoropolymers, specifically PTFE, which is well known for its non-stick properties. The Xylan surface is designed to withstand normal cooking temperatures but should not be overheated when empty. When exposed to extremely high temperatures, its structure can be damaged. To maintain longevity, it is usually recommended to use kitchen utensils made of wood, silicone or plastic that will not scratch the surface. Xylan is therefore the trade name for a specific surface treatment that gives the pan its non-stick function.
