Teflon is the trade name for a material known as polytetrafluoroethylene, or PTFE, which is used to form the inner non-stick layer of a pan. The main function of this surface is to prevent food from sticking and burning during cooking. This allows cooking with a minimum of oil or fat, which is useful, for example, when preparing eggs, pancakes or delicate fish, which are not torn. Another advantage is that cleaning is considerably easier, as food residues do not stick to the surface. To maintain the functionality of the Teflon coating, it is important not to use metal utensils that could scratch it. Tools made of wood, silicone or special plastic are more suitable. Pans with this coating should also not be overheated, especially not when empty, as at very high temperatures the coating can be damaged and release gaseous substances.
