Liquid smoke is produced by burning quality wood and then condensing it in water, but the resulting condensates are further treated and stripped of residual undesirable substances so that the exact composition of the final product is known, unlike conventional smoke. For marinating meat, add 2 to 3 tablespoons of smoke per 1 kg of meat (too much can lead to undesirable bitterness).
For smoking cheese withjust rub or spray lightly and leave it for a while. The applied liquid smoke must dry.
