Oxidation of tea is the process by which tea leaves are exposed to air, leading to chemical reactions that change the flavour, colour and aroma of the tea. It is due to oxidation that we distinguish different types of tea - white, green, oolong and black. Black teas have the highest oxidation rate, white teas the lowest. Minimally oxidised teas retain a fresh, delicate and slightly floral flavour that is close to the original taste of the tea leaves. Due to the limited oxidation, teas retain higher levels of antioxidants, which are beneficial for health.
