Two-phase sharpening system
The Wüsthof stone uses a two-stage system for the complete care of your knives. The coarser side with a J3000 grit is intended for basic sharpening, evening out the edge, and removing minor imperfections. Once you have achieved a basic sharpness, turn the stone over to the finer side with a J8000 grit, which is used for final honing and polishing. This step gives the edge exceptional fineness. In addition, the stone's open-pore structure ensures that new abrasive particles are continuously released as you work.
